Bigi's Chapli Kabob in Reseda

Bigi's Chapli Kabob is a legendary specialty hailing from eastern Afghanistan and the Khyber region. Coarsely ground 100% Zabiha Halal beef is hand-kneaded with coarsely cracked coriander seeds, whole pomegranate seeds (anardana), diced vine-ripened tomatoes, fresh scallions, crushed garlic, and finely minced green chilies. The patty is pressed wide and thin, then seared on a searing flattop griddle in natural fats until the lace-thin perimeter turns intensely crunchy while the interior remains succulent and aromatic. Served with warm Afghan flatbread or fragrant basmati rice, crisp sliced red onions, fresh lime wedges, and cilantro yogurt chutney. Bold, punchy, and full of texture.

What gives Chapli Kabob its signature crunch?

Coarsely cracked whole coriander seeds and the thin, flat-pressed searing technique create its famous crispy lacy rim.

Is the Chapli Kabob spicy?

It has a noticeable, pleasant kick from fresh green chilies and warming Afghan spices, balanced by cool cilantro chutney.
